A chardonnay from a granitic soil vineyard located between Macedon and Bendigo GI’s Handpicked and whole bunch pressed with full solids to 800L  Rousseau muids and older barrels, fermented with indigenous yeasts and left sur lees for 8 months before being bottled unfiltered and unfined. 

As always the only addition to this wine was a small amount of so2 at the winery receipt and at bottling..

Alc/vol 13.5%
