The first wine grown, fermented and bottled by us at our new Preston Urban Winery. The fruit is from our small vineyard in Wandin East, farmed (uncertified) organically and is a blend of a small section of the plot planted to a hotchpotch of Sauvignon Blanc, Syrah and Merlot.

Mind Fizz was fermented in barrel with indigenous yeasts, zero SO2 and bottled toward the end of fermentation to produce a bright Pet Nat at 11% alc/vol. Only 480 bottles were made (and we've drunk quite a few of them already!) so be quick!
