Grown in Faraday in Bendigo, the 2021 Apricity Pinot Gris saw 3 days of skin contact and was sent to French oak 5000 litre barrel for the remainder of fermentation. Left on lees for 8 months, bottled unfiltered and unfined with minimal added sulphites.
